The turmeric, which is the spice that gives breakfast sausage it's characteristic flavor, tends to make the stuffing seem as if it had sausage in it. But there is none in there. We are talking about your basic vegetarian appetizer.

Ingredients
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, chopped
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 3 slices bread (for bread crumbs)
  • 1/4 cup green onion, chopped
  • 1/2 teaspoon thyme
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon black pepper
  • 16 mushroom caps

Directions
  1. 1. Remove stems and gills from mushrooms. Chop stems and set aside.
  2. 2. Place bread slices in food processor or blender and chop to crumbs. Medium size, don't pulverize them.
  3. 3. Melt margarine in a small saute skillet. Add garlic, salt, green onion, thyme, tumeric and pepper. Heat over medium heat until blended.
  4. 4. Add chopped mushroom stems and saute until mushrooms are tender. Add bread crumbs and blend all together.
  5. 5. Spray the bottom of a glass baking dish with non-stick spray. Fill each mushroom cap with the stuffing mix and arrange in baking dish.
  6. 5. Bake at 350 F for about 20 minutes or until mushrooms are brown and tender. Serve immediately.

Well, not everyone appreciates the organic idea. I am not a vegetarian but everything does not need to have red meat in it. I love seafood and have many recipes posted for it. This recipe is an adaptation from a cookbook. I needed to adjust the amounts to make it taste like it had sausage in it even though it does not.


Ohhhhh, this sounds *wonderful*! I love the idea of the dish tasting like it contains sausage; my husband can't eat sausage, but we miss the flavor. Thanks!


Soprano made a comment in a message that this was not turning out as expected. So I went back and read the recipe carefully. There was a step missing and an ingredient open to misinterpretation. I use three slices of bread, run through a food processor to make "soft bread crumbs". That is a big difference. Lots less filling and much lighter, wetter, softer.

Sorry for the error, have changed ingredients and instructions.

Alterations


I cut the salt to 1/2 teaspoonful and added 1/2 teaspoonful of sage to the spices. I bake them in the oven for 20 minutes, then give them 3 minutes in the microwave to be sure the larger mushrooms are cooked through.


Nice touch. There are so many twists you can put on most recipes. That's what makes if fun. The safe sounds like a nice touch.
