Breakfast Burritos

- 1 bell pepper, I like to use green or orange for color, you can use mix shopping list
- 1/2 cup mushrooms, I used baby bellas today shopping list
- 1 small red onion, again great color shopping list
- 1 pound sausage, your favorite, the one I use has next to no fat, its great shopping list
- 1 dozen eggs shopping list
- 1/2 to 1 cup milk shopping list
- 1 tablespoon garlic powder shopping list
- 1 tablespoon italian seasoning shopping list
- 1 teaspoon pepper shopping list
- 1 cup of your favorite cheese, I used mexi mix today shopping list
- ~ shopping list
- shells shopping list
- baby spinach, to use as the greens on the burrito shopping list
- can of diced tomatoes with green chilies as the tomatoes in the burritos shopping list
- ~ shopping list
- hash browns as a side shopping list
How to make it
- Chop up the bell pepper, mushrooms, and onions.
- Set aside.
- Put the sausage into a big pan.
- Toss in the pre-chopped veggies.
- Cook until well done.
- While the sausage is cooking crack open the eggs into a deep narrow bowl, I used the same one I had stored the veggies in.
- Mix them until they are lemon colored.
- Add the milk.
- Mix well.
- When the sausage mixture is cooked well, pour in the eggs.
- Add the garlic powder, Italian seasoning, and the pepper.
- Cook until the eggs are as done as you want them to be.
- We like soft cooked eggs at our house. If you prefer less wet eggs add less milk.
- When eggs are done add the cheese and cook a couple more minutes.
- ~
- Heat up the shells.
- Assemble and serve!
- I go: egg mixture, cheese (so it will melt on the hot eggs), tomatoes, greens.....
- We had hash browns on the side today!!!
- I also served V8 fusion today....
