How to make it

  • Preheat oven to 400ºF.
  • I use heavy duty foil, cut into 18" X 18" pieces.
  • Put ear of corn into center of foil, shiny side in.
  • Add potatoes, carrots, onion and tomatoes on top and sides.
  • Season with seasoning and pepper.
  • Put sausage on top, add 1/4 cup of water and seal foil packet so no moisture will not leak out
  • Put each packet into the oven and bake for about 1 hour. Turn oven off and allow to set for at least a half hour.
  • Allow to rest for at least 15 minutes before serving.
  • I always use frozen meat so cooking time will be less if meat isn't frozen.

    I thought this version of the hobo dinner was delicious. It's amazing how good an ear of corn can taste after it's been baked under a sausage! YUMMMMM
