How to make it

  • Heat the oil to about 350 degrees.
  • In small bowl whisk together buttermilk and eggs. Soak sliced onions in this for 15 minutes up to an hour
  • In a bowl mix together the coating mixture, and then place into a shallow dish (a shallow dish makes for easier coating of the rings). Place the panko breadcrumbs into another shallow dish.
  • Remove the onion rings from buttermilk mixture and place on plate. Save the buttermilk mixture.
  • Dip and coat the onion rings with the flour mixture, dip back into the buttermilk mixture then coat generously in the panko.
  • Fry briefly in hot oil (turning once) until onion rings are lightly brown on both sides. Place paper towels on a large baking sheet to drain the onion rings.
  • When ready to serve, reheat the onion rings on a parchment lined baking sheet at 400 degrees for 8-10 minutes, or until golden brown.

    OMG...came across this one searching for a breaded fried potato recipe (my son gave me the idea a couple of days ago)..I was salivating just from the word "panko" -- I spotted a Japanese grocer & bought a bunch of them when I was in Columbus OH (enough to fill up one of those popcorn cans..the ones that appear around Christmas time!), and of course, I started seeing them all the time in the regular grocery stores shortly after :(

    Just bought a 3# bag of Vidalia onions a couple of days ago, so I'll definitely have to give this one a try!

    I'll have to share this website with my son..he's 22 & he likes to experiment with food recipes just about as much as I do!

    My husband will love you forever for supplying this recipe. He lives for fried onion rings, so I have to keep the lid on most of the time. But, at Christmas time, he can have a treat and this looks like just the ticket. Thanks from him.
