Super Blueberry Ice Cream Recipe

How to make it

  • In a 3-quart saucepan combines blueberries, sugar and orange juice. Mash berries slightly and cook over medium heat, stirring occasionally, until the mixture comes to a boil. Simmer 5 minutes.
  • Remove from heat and puree in a food processor or blender. Push mixture through a strainer with the back of a wooden spoon. Cool the mixture.
  • In a ice-cream maker combine blueberry mixture, cream and vanilla. Freeze according to manufacturer's directions.

    Highly recommend homemade blueberry ice cream. Just made a different version of blueberry ice cream recently using bilberries and the results were sublime. I'll have to compare your recipe with mine. :) Thanks for posting.

    I love this, blueberries are one of my favorites.
    I don't have a ice cream maker but have made ice cream without one.
    I just follow instructions up to "put into ice cream maker" then I put it into a suitable container and freeze for an hour or so, then take out and beat, return to freezer for another hour or so, and repeat a few more times then leave to freeze.
