Creamy Poached Eggs Recipe
A different twist on Eggs Benedict, one I can actually get my boyfriend to eat. Great with some fruit on the side, I prefer melons.

Ingredients
  • 3/4 cup american cheese, shredded
  • 1 3onuce pkg. cream cheese w/ chives, cut into chunks
  • 1/2 cup milk
  • freshly ground black pepper
  • 4 eggs
  • 2 english muffins, spilt and toasted

Directions
  1. In a medium skillet, combine American cheese, cream chesse, milk, and pepper.
  2. Cook and stir over medium heat until the cheese has melted.
  3. Remove from heat.
  4. Break an egg into a measuring cup.
  5. Carefully slide egg into cheese mixture. Repeat with remaining eggs.
  6. Cover and cook over medium-low heat for 3-5 minutes. The whites should be set completely and the yolks thicken but not hard.
  7. Top each muffin slice with egg.
  8. Stir the cheese mixture with a whisk; spoon over eggs.
