Ingredients

1/4 cup chopped onion

2 tbsp. butter

1 package(10 ounces) frozen chopped spinach, thawed and well drained

1/4 to 1/2 tsp. salt

1/4 tsp. ground nutmeg

1 cup cottage cheese

1/2 cup light cream

1/4 cup grated Parmesan cheese

3 eggs, lightly beaten

1 unbaked pastry shell9 9 inches)

Directions

In a skillet, saute onion in butter.

Remove from the heat; stir in spinach, salt and nutmeg.

In a bowl, combine cottage cheese, cream, Parmesan cheese and eggs: mix well. Stir in spinach mixture.

Pour into pie shell.

Bake at 350* for 45-50 minutes or until knife comes out clean.

Let stand 5 minutes before cutting.
