Ingredients
  • 1/4 cup chopped onion
  • 2 tbsp. butter
  • 1 package(10 ounces) frozen chopped spinach, thawed and well drained
  • 1/4 to 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1 cup cottage cheese
  • 1/2 cup light cream
  • 1/4 cup grated Parmesan cheese
  • 3 eggs, lightly beaten
  • 1 unbaked pastry shell9 9 inches)

Directions
  1. In a skillet, saute onion in butter.
  2. Remove from the heat; stir in spinach, salt and nutmeg.
  3. In a bowl, combine cottage cheese, cream, Parmesan cheese and eggs: mix well. Stir in spinach mixture.
  4. Pour into pie shell.
  5. Bake at 350* for 45-50 minutes or until knife comes out clean.
  6. Let stand 5 minutes before cutting.
