These are also delicious around the holidays...They are pretty when plated....

Ingredients
- Cookie:
- 1 cup butter
- 1/2 cup confectioners sugar
- 1 teaspoon lemon extract
- 2 cups all purpose flour
- 1/4 teaspoon salt
- Lemon Butter Filling:
- 1 egg, lightly beaten
- 2/3 cup sugar
- 3 tablespoons lemon juice
- grated zest of one lemon
- 1 1/2 tablespoons butter, softened
- Additional confectioners sugar
Directions
- In a mixing bowl, cream butter and sugar, add extract.
- Sift together flour and salt; add to creamed mixture and mix well.
- Roll level teaspoons into balls, flatten lightly.
- Place one inch apart on ungreased cookie sheets.
- Bake at 350 degrees for 8 to 10 minutes.
- Meanwhile for filling:
- Combine egg, sugar, lemon juice, zest, and butter in the top of a double boiler.
- Cook over hot water stirring constantly.
- Cool.
- Spread filling on half the cookies and top each with another cookie.
- Roll in confectioners sugar.
- 2 1/2 to 3 dozen
