Vermont Turkey Loaf For 2 - Diabetic Friendly

- Ingredients: shopping list
- 1/3 cup coarsely chopped onion shopping list
- 1/3 cup coarsely chopped fresh mushrooms shopping list
- 1/3 cup coarsely chopped carrot shopping list
- 1/3 cup dry bread crumbs shopping list
- ¼ tsp. salt shopping list
- ¼ tsp. pepper shopping list
- ½ pound lean ground turkey shopping list
- 1 Tbs. maple syrup sugar-Free shopping list
- 1 Tbs. Dijon mustard shopping list
How to make it
- Preheat oven at 375 F.
- In a small skillet coated with cooking spray, saute the onion, mushrooms and carrot until tender; cool slightly.
- In a small bowl, combine the vegetables, bread crumbs, salt and pepper. Crumble turkey over mixture and mix well. Shape into a 6-inch x 3-inch loaf.
- Place in an 8-inch square baking dish coated with cooking spray. Bake, uncovered, at 375 F. for 15 minutes.
- In a small bowl, combine syrup and mustard; pour half over the turkey loaf. Bake 5 – 10 minutes longer or until a meat thermometer reads 165 F. and juices run clear. Serve with the remaining syrup mixture. Yield: 2 servings.
