How to make it

  • Preheat oven to 400 degrees;bring large pot of salted water to a boil for pasta.
  • Cook pasta according to directions;drain. Toss with parsley and 2 Tbs oil;keep warm.
  • Prepare breading,placing panko,flour,and eggs in seperate shallow dishes.Dredge cutlets in' flour then egg and then panko. Heat 4 Tbs oil in large saute pan over med-high heat. Saute pork on both sides till golen,5-6 mins;remove from pan.
  • Add 1 Tbs oil to the pan. Saute onion and garlic for 3 mins.,then stir in tomatoes,broth,vinegar,sugar and oregano.. Crush with potato masher,then bring to a boil;simmer 10 mins. Return pork to pan'top with cheese and transfer pan to oven. Bake till cheese melts,5 mins.
