Pork Mozzarella Cutlets with Pasta

- 1/2 lb dry fettuccini pasta shopping list
- 2 Tbs fresh chopped parsley shopping list
- 7 Tbs extra virgin olive oil,divided shopping list
- 1 c panko crumbs shopping list
- 1/2 c flour shopping list
- 2 eggs,beaten shopping list
- 4 boneless pork loin chops,trimmed,pounded to 1/4" thick,seasoned wit salt and pepper (5oz ea.) shopping list
- 1 c diced onion shopping list
- 1 Tbs minced garlic shopping list
- 1 can diced tomatoes in juice (28 oz) shopping list
- 1/2 c chicken broth shopping list
- 1 Tbs red wine vinegar shopping list
- 1 tsp sugar shopping list
- 1/2 tsp dried oregano shopping list
- 1/2 lb fresh mozzarella,sliced shopping list
How to make it
- Preheat oven to 400 degrees;bring large pot of salted water to a boil for pasta.
- Cook pasta according to directions;drain. Toss with parsley and 2 Tbs oil;keep warm.
- Prepare breading,placing panko,flour,and eggs in seperate shallow dishes.Dredge cutlets in' flour then egg and then panko. Heat 4 Tbs oil in large saute pan over med-high heat. Saute pork on both sides till golen,5-6 mins;remove from pan.
- Add 1 Tbs oil to the pan. Saute onion and garlic for 3 mins.,then stir in tomatoes,broth,vinegar,sugar and oregano.. Crush with potato masher,then bring to a boil;simmer 10 mins. Return pork to pan'top with cheese and transfer pan to oven. Bake till cheese melts,5 mins.
