Spinach Caramelized Onion and Muenster Au Gratin Potatoes

- about 8 red potatoes, or 4 russets, cubed shopping list
- 5 oz fresh spinach shopping list
- 4 tablespoons butter shopping list
- 1 onion, sliced shopping list
- 1 teaspoon crushed garlic shopping list
- 3 tablespoons flour shopping list
- 1/2 teaspoon salt shopping list
- 1 cup milk shopping list
- 1 cup cream shopping list
- 2 cups muenster cheese shopping list
How to make it
- toss together your potatoes and spinach in your baking dish.
- Now, melt 3 tablespoons of butter in a medium saucepan and add your onions.
- Cook over med-low heat til onions are nice and caramelized.
- Add the garlic and cook for another minute or so. Now add the remaining tablespoon of butter.
- Once, melted add flour and stir til its a nice golden color.
- Slowly pour in the milk and cream and stir til thickened.
- Add the salt and 1 1/2 cups of the muenster cheese.
- Once the cheese is all melted and all nicely incorporated, pour over the potatoes and spinach.
- Preheat your oven to 400 degrees. Cover your dish and cook 30 minutes.
- Now uncover and cook an additional 20 minutes
- Now remove from the oven and top with the remaining 1/2 cup of cheese.
- Put back in the oven for an additional 10 minutes
- Enjoy!
