Summer Chilled Green Beans And Onions In Sweet Sour Cream Dressing Recipe
This reminds me of my grandmother…I remember her bringing this to picnics or family gatherings in the summer. You can use canned green beans, but my favorite is still with fresh green beans, cooked just til tender-crisp.

Ingredients
  • 1 pound fresh green beans, cleaned, cooked and cooled (canned green beans may be used, but the flavor is not quite the same)
  • scant ½ cup sour cream (reduced fat sour cream is fine for this)
  • 2 tablespoons cider vinegar
  • about 2 tablespoons sugar, to your taste (or sugar substitute)
  • salt and pepper, to your taste

Directions
  1. Mix sour cream, vinegar, sugar, salt and pepper in a bowl,
  2. Adjust seasoning to how sweet or salty you like it.
  3. Pour the sour cream dressing over the cold green beans.
  4. Serve cold.
  5. NOTE: I like the green beans just a touch crisp for this, so don't cook until they are completely soft (unless you prefer them that way!).
