Ingredients

How to make it

  • In a heavy sauce pan, heat butter. Add onion, bacon and celery, saute for 5 minutes, until onion is golden and bacon is cooked.
  • Add peas and 1/2 cup of ham. Cook a couple of minutes.
  • Add rice and stir well to coat each grain with some of the butter, a few minutes at best.
  • Add stock and seasonings. Bring to a rapid boil, cover and turn the heat to low and cook very slowly for 25 minutes until the rice is tender and the liquid is nearly absorbed.
  • The rice and peas should be quite moist at this point.
  • Stir in parmesan cheese and serve.
  • Pass extra parmesan to add to individual servings if desired.

    Seems I'm on a risotto kick lately. And although I've not ever made it yet, I'm excited and very much looking forward to the initial experience. Risi e bisi was one of the variations mentioned on wikipedia, and I remembered this dish from Weight Watchers days. Thanks for posting this, Tina.

    Great recipe, the version I have doesn't include bacon or celery but that stuff would make anything taste better!

    yummm. haven't seen actual ham added before. we usually eat risi e bisi as a little starter as its quite soupy (thick soupy). i think its odd ive never seen it in an italian restaurant. truly a keeper! thanks!

    Great post. This is a very good variation of traditional Risi E Bisi, rice and peas. But note the short grain rice. Anyone making this dish should use that, just as it is in the recipe. And don't wash it. Washing would remove starch and starch is needed. The butter will coat the rice and help keep the grains separate. Some recipes use Arborio, or a risotto rice. This is good stuff. If you haven't cooked this, it's worth a try. The variations are many. Some use pancetti, mushrooms, whatever. It's good.
