Austrian Beef Goulash

- 4 large onions, peeled and chopped shopping list
- 1/4 c. lard, bacon fat, or oil shopping list
- 5 oz (10 T) Hungarian paprika shopping list
- 2 qt. water shopping list
- 1 t. each: dried marjoram (1 T. if fresh), caraway seeds, black pepper shopping list
- 1 clove garlic, peeled and diced shopping list
- grated rind of 1/2 lemon shopping list
- 3 lb. chuck, cubed shopping list
- 4 potatoes, peeled and cubed shopping list
- 1 c. green beans, in 1-inch pieces shopping list
- salt and pepper (to taste) shopping list
How to make it
- In a large, heavy pan, cook the onions in the lard or oil over medium-low heat until soft and golden. Add the paprika and mix thoroughly, then add the water and the seasonings. Simmer, uncovered, for an hour. Add the beef, and simmer until the beef is almost tender. Add the potatoes and green beans, and simmer until the beef is tender and the vegetables are done.
