Smothered Cabbage

- 1 head of green cabbage, chopped shopping list
- 1 onion, diced shopping list
- 1 garlic cloves, minced shopping list
- 2 spring onions, chopped shopping list
- 3 - 4 hot sausage links, or 6 slices of thick bacon shopping list
- salt and pepper to taste shopping list
- ground parsley or fresh just a little for color shopping list
- 1 tsp creole seasoning shopping list
- splash of white wine vinegar shopping list
- pinch of sugar shopping list
How to make it
- In a pot brown sausage or bacon and slice into bite size pieces. Save drippings.
- Add onions, garlic, spring onions and white wine vinegar.
- Add cabbage and seasoning, spices, herbs and sugar.
- Lower heat when cabbage begins to wilt. Do not let the cabbage liquid dry up completely. If it does add a little butter.
- Serve with pork chops, roast, etc.

I love this dish, it is a family favorite for sure. I think I have a cabbage in the veggie drawer, I'll have to make this soon. YUM!
