Ingredients

How to make it

  • Place cucumbers and onions in a bowl of salted ice water and refrigerator for several hours or until crisp.
  • Combine sour cream, salad dressing, vinegar, dry mustard, and garlic powder, mix well, and chill
  • Drain cucumbers and onions, add green onions, toss to combine, and mix in dressing
  • Garnish with remaining green onion and paprika

    Wonderful salad. I had a cucumber in the vegetable crisper that I...ummm...forgot about and it had gotten a tad soft. The ice water bath really brought it "back to life."! I always cut a cucumber in half and scoop out the seeds with a spoon before using in a salad. Other than that, perfect salad in my book!

    This recipe was a hit, too. :) It's tart enough that those who like the vinegar based cucumber salad were pleased, but the creamy style lovers were happy, too. :) The ONLY change I made was to use Mayo cus we don't use, or enjoy, salad dressing. That's just a personal taste preference. If you like it, then this salad would be great as written... if you prefer mayo, then it works great in this, too! :)

    Hi joyride! Glad you stumbled on my recipe. Not sure if it is the onions that would make the difference. I've compared it to similar recipes over the years and I think it may be the dry mustard.

    I hope you enjoy this bsm! Make sure the cukes and onions are well drained. I sometimes "blot" them between a few layers of paper towel. If you have extras you maybe noticed a bit of separation the next day, give it a good stir and polish it off, lol.

    This is a delicious salad, 5 forks all the way! It's a nice change on a hot summers day, definitely more refreshing then your traditional salad.

    This sounds really yummy. The chilling of the onions/cucumbers is likely what puts it on the family favorite list. My step FIL had a onion cucumber freezer "pickle" that was so, so, good, too.
