Ingredients
  • 1 tablespoon of butter
  • 4 fillets of beef ( at least 1 and 1/2 inches thick)
  • salt
  • coarse ground black pepper
  • 1/4 teaspoon crushed rosemary leaves
  • 1/2 cup of crumbled sage leaves
  • 1/4 cup of Cognac
  • 4 teaspoons of Dijon mustard
  • 4 teaspoons of mild brown or herb flavored mustard
  • 1/4 teaspoon of paprika
  • 2 tablespoons of commercial sour cream
  • 1/2 cup of heavy cream

Directions
  1. In a heavy bottom skillet, heat the butter and saute over high heat four filets of beef.
  2. Season each side with salt, pepper, rosemary and sage.
  3. Cook four minutes per side for rare.
  4. Pour off excess fat from the pan.
  5. Sprinkle the fillets with cognac and ignite.
  6. When the flame dies out, transfer filets to warm serving platter and keep warm.
  7. To the skillet add the mustard and paprika. Stir to combine with the pan juices.
  8. Add sour cream and cream to the mustard in the skillet.
  9. Cook for one minute.
  10. Pour over the filets and serve.
