How to make it

  • COMBINE coconut, pineapple, pecans, sweetened condensed milk and lemon juice in large bowl; mix well. Fold in whipped topping. Pour into prepared crust. Cover and chill 3 hours or overnight.

    This is my all time favorite pie. I used to go to a place called Furr's pie kitchen to get it. My baker learned how to make it and you are the only person who I have ever seen with a recipe.

    You know, I thought this was uber easy until I looked up what sable pastry was? I came up with this: (and forgive me, Ahmed, this is more for your readers)

    125g butter at room temp.
    125g icing sugar sifted
    2 eggs beaten
    3 Tbspns double cream
    310g plain flour sifted

    Gently cream the butter and the sugar.
    Add the eggs slowly mixing well.
    Add the cream.
    Add the flour all at once and mix to a smooth paste.
    Divide the dough in half.
    Wrap separately in cling film and store in the refrigerator.

    I looked up double cream (used in the sable shell) because I've never seen it here. Apparently, it's not available in the US. I found this site that tells us how to make our own substitute:

    Once again, you make something difficult look easy. Way to go! Although you do waste a lot of perfectly good chocolate sauce. lol
