Baked Chicken Chimichanga de Puerto Angle

- • 4 cups cooked chicken, shredded shopping list
- • 1/2 white onion, chopped shopping list
- • 1-4oz can diced green chilies shopping list
- • 1 cup picante sauce shopping list
- • 1 cup enchilada sauce, as posted shopping list
- • 2 avocados, skinned and chopped or mashed. shopping list
- • Shredded cheddar cheese shopping list
- • sour cream shopping list
- • cilantro shopping list
- • 4 flour tortillas, burrito size shopping list
How to make it
- 1. Heat oven to 400
- 2. Saute onions in a little oil in a skillet
- 3. When softened, add chicken, picante sauce and green chiles
- 4. In a separate pan, heat the enchilada sauce
- 5. Heat tortillas to make them pliable
- 6. Spoon ¼ of the mixture plus ¼ of the avocado on each tortilla and roll up restaurant style
- 7. Place on a greased pan and rub top of burrito lightly with oil
- 8. Bake until golden, about 10-15 minutes
- 9. Spoon warm enchilada sauce on a plate, lay Chimichanga on top, add a spoonful of sour cream and sprinkle with cheese and cilantro
- I usually serve this with beans or Mexican rice and a bit of green salad.
