Ingredients

How to make it

  • 1. Heat oven to 400
  • 2. Saute onions in a little oil in a skillet
  • 3. When softened, add chicken, picante sauce and green chiles
  • 4. In a separate pan, heat the enchilada sauce
  • 5. Heat tortillas to make them pliable
  • 6. Spoon ¼ of the mixture plus ¼ of the avocado on each tortilla and roll up restaurant style
  • 7. Place on a greased pan and rub top of burrito lightly with oil
  • 8. Bake until golden, about 10-15 minutes
  • 9. Spoon warm enchilada sauce on a plate, lay Chimichanga on top, add a spoonful of sour cream and sprinkle with cheese and cilantro
  • I usually serve this with beans or Mexican rice and a bit of green salad.

    Now let me get this right...

    A Chivichanga is a deep fried burrito very popular in the southwest...sorta like a Tex-Mex cuisine.Filled with a wide range of ingredients.

    Yours in particular with chicken.

    A great sounding recipe,perhaps I'll try this with a great chunky beef,I have had my fill of shredded beef.
