Latin Baked Chicken

- 1/4 c fresh lime juice shopping list
- 3 Tbs less-sodium soy sauce shopping list
- 2 Tbs honey shopping list
- 2 Tbs minced chipolte peppers in adobo sauce shopping list
- 8 (4 oz) bone-in chicken thighs,skinned shopping list
How to make it
- Preheat oven to 400 degrees. Combine lime juice,honey and chipolte in a large bowl. Add chicken and toss well to coat. Let stand 10 mins at room temperature.
- Arrange the chicken on a broiler pan coated with spray;reserving marinade.
- Bake for 15 mins. Place reserved marinade in a blender and process till smooth. Place pureed marinade in small saucepan. Bring to a boil and cook 3 mins.
- Brush chicken with hsalf of cooked sauce;return to oven and bake addditional 10 mins. Brush chicken with remaining sauce;bake additional 10 mins or till thermometer registers 165 degrees.
