    Trying to use up those chipotles, folks. :-)
    Latin Baked Chicken
    I took my first bite with some trepidation because of the actual sauce I had on there. I don't have a blender and my food processor resulted in lumps. But - I loved this!! There is a lot of wonderful flavor going on here. The only thing I am not certain of is if there is enough sauce for eight thighs. I had four and barely made it. Although I only had two limes so I didn't measure the lime juice. Maybe there wasn't enough of that.

    I added that to my rapidly expanding recipe box. I have never had, or for that matter, cooked with adobo sauce and chipolte peppers, but I'm going to give it a go anyways. Hopefully my store will have them. Thanks!

    In our store the chipotle with adobo are by the chopped green chilies and canned jalapenos on the ethnic food aisle...hopefully you can find them, they are SO GOOD!! :)

    I hope you can find the chipotles in adobo. I don't like heat very much at all but I do like that stuff. Its really got a lovely smokey thing going on.
    These were great and I'm curious as to how they will reheat and taste tonight.

    This chicken looks beautiful...it's got all the soy sauce, so takes it off my list but chipotle and honey and lime??? Goodness sakes, yes. :-) :-)

    And, I think you're right... no way is that enough sauce for 8 thighs! weird

    I never put things in the blender. I just use my Cuisinart stick blender and pop it right in the pan/pot/bowl,crockpot or what ever. GREAT for blending/mashing refried beans,

    Probably so. But the way in which this recipe uses the lime leaves a strong lime flavoring. If using lemon expect a lemony flavor. In this recipe it makes a huge difference in the flair of flavor. The word "Latin" in the recipe title, I think, assumes the lime flavoring. But if one wants to just make a citrus baked chicken, have at it. Grapefruit, lemon, or any other citrus is yours to use.

    This was delicious! My food processor barely had enough ingredients to get a good puree out of this, so yes there is some chunks from them catching on the sides. I actually only used 3 thighs (one I baked seperate in BBQ sauce for the kiddos), and the sauce amount was pretty spot on. This amount would never have covered 8 thighs. After pureeing and simmering the sauce I poured the whole amount over the thighs and basted a couple of times. I will add the picture eventually..my camera was dead so I used my phone, which I have no clue of how to upload...
