Ingredients

How to make it

  • Beat the egg whites until stiff.
  • In a medium-sized bowl, combine zucchini, egg yolks (or not), feta, green onions, seasonings and flour. Mix well.
  • Fold the egg whites into the zucchini mixture.
  • Heat a little oil in a skillet, and when hot add spoonfuls of batter.
  • Flatten and fry on both sides until golden and crisp.
  • Serve immediately!
  • Enjoy!

    Thanks for this lovely recipe, Janet! I made these for lunch one day b/c I had a half zucchini I wanted to use up. I shredded by hand & I cut the recipe in a quarter, using one whole egg. I also added fresh dill and topped it with sour cream mixed up with fresh dill, green onion, lemon juice, and black pepper. Finally, I sprinkled them with a bit of sea salt. YUM!
