Zucchini-Feta Pancakes

- 4 eggs, separated (yolks optional) shopping list
- 4 cups grated zucchini (about 4-7" ones) shopping list
- 1 cup finely crumbled feta cheese shopping list
- 1/2 cup finely chopped green onions shopping list
- 1 tbsp. fresh mint, finely minced shopping list
- lots of black pepper shopping list
- 1/3 cup flour shopping list
- olive oil for frying shopping list
How to make it
- Beat the egg whites until stiff.
- In a medium-sized bowl, combine zucchini, egg yolks (or not), feta, green onions, seasonings and flour. Mix well.
- Fold the egg whites into the zucchini mixture.
- Heat a little oil in a skillet, and when hot add spoonfuls of batter.
- Flatten and fry on both sides until golden and crisp.
- Serve immediately!
- Enjoy!
