Carne De Res Deshebrada Con Repollo

- • 1 lb Carne de Res Deshebrada; or whatever meat you’re using. shopping list
- • 1 medium to large head of red cabbage. shopping list
- • 1 medium onion shopping list
- • 2 Tsp butter shopping list
- • 1 Tsp olive oil shopping list
- • 2 cloves of garlic. shopping list
- • 1’4 cup cilantro shopping list
- • 1 or 2 chopped jalapeno peppers, optional to taste. shopping list
- • 1 cup of grated cheese of your choice (I usually use mild cheddar). shopping list
- • 2 tsp chilli powder, if you’re not using Carne. shopping list
- • salt and fresh ground pepper to taste. shopping list
How to make it
- 1. Core and slice the cabbage like you were making coleslaw. If you’ve never made coleslaw, halve the cabbage, core it and slice with the grain about 1/4“ thick; you want it in long thin strings. Put in a bowl and set aside.
- 2. Chop the onion and garlic and set aside.
- 3. Get a 15” cast iron skillet medium hot; add the olive oil and butter.
- 4. Drop in the onion and garlic and cook until they turn translucent.
- 5. Add the Carne, cilantro (jalapenos if using) and cabbage and cook until the cabbage is just cooked, stirring two or three times. The Carne is already cooked so you’re just heating that up a bit as you cook the cabbage. If you’re using mince something or other you need to cook that a bit (to taste) before you add the cabbage and you want to add the chilli powder with the mince.
- 6. To serve, divide into 3 or four portions, sprinkle with the grated cheese and put in a pre-heated oven for a few minutes, until cheese melts. Yes, you can melt the cheese in the microwave.
- I usually serve this with tortillas or Mexican rice but have done with cottage fries or plane rice; just suite your mood.
