Kraft stopped making jalapano cheese rolls several years ago and after the River Roads cookbook was published. Some are using Hot Mexican Velvetta, which is a recommendation of the Southern Living test kitchens. But then you're stuck with a block of that stuff. We use regular Velvetta with a little juice from canned or jar jalapenos. It works. This recipe is in a lot of cookbooks and they all have the jalapeno cheese, because that was the original recipe. But these subs work and maybe we're back in the spinach madeleine business.

This is a wonderful recipe. I make it often, and I use the hot Mexican cheese. Believe it or not, it is even good in the hot summer, served cold, as a dip. Have had the recipe for a long time. It is a real winner!
