Ingredients

How to make it

  • Combine berries, orange juice, honey and salt in medium bowl.
  • Toss to combine. Let rest at least 15 minutes to render some juices from the berries. See Photo
  • With 1 cup ramekins, or similar, use as a mold to cut bread slices to fit. See Photo
  • Add enough berries to cover bottom of ramekin in single layer. See Photo
  • Add a thin layer of yogurt to just cover berries. See Photo
  • Add sprinkling of fresh nutmeg, if using
  • Add bread round and push down against the yogurt.
  • Repeat, ending with a bread round.
  • Spoon a bit of the remaining juice from the berries over last bread round. See Photo
  • Cover with plastic wrap and weight down with a full canned product. See Photo
  • Refrigerate overnight, or at least 4 hours.
  • To serve, remove plastic wrap and lightly run a knife or toothpick along edge of ramekin.
  • Invert serving plate over the top and carefully flip over.
  • Gently tap the ramekin, if needed, to loosen, but they should come out easily. If not, then run your knife further down the ramekin.

    ...in case anyone pays attention... the lower star review was from a jokester way back when I first posted the recipe. He/she hit a few recipes with a low rating for no reason. :)

    This turned out great, K. I used plain yogurt and agave instead of honey because I didn't have the official ingredients. I was just thinking about an adaptation: there are some great flour and corn tortillas available here: soft and thick. I was thinking about changing the bread out for tortillas and adding chopped jalapenos to the mix. Your opinion?
