Baked Spaghetti And Mozzarella

- coarse salt shopping list
- 2 cans (28oz ea) whole,peeled tomatoes shopping list
- 2 TB extra-virgin olive oil shopping list
- 2 garlic cloves,smashed and peeled shopping list
- 3/4 lb spaghetti shopping list
- 2 c packed basil leaves,torn if large shopping list
- 3/4 lb fresh mozzarella,cut in 2" pieces (2-1/2 c) shopping list
How to make it
- Preheat oven to 400'.
- Set large pot of salted water to boil. In food processor,pulse tomatoes until coarsely chopped.
- In large skillet,heat oil over med-high. Add garlic and cook till fragrant,about 1 min. Add tomatoes and bring to boil. Cook at rapid simmer till sauce thickens,about 12 mins.
- Meanwhile,cook pasta 5 mins(it will still be crunchy). Drain pasta and return to pot.
- Add tomato sauce,basil and half of mozzarella and toss to combine.
- Transfer mixture to a 3 qt. baking dish and top with remaining cheese. Bake until cheese is golden and edges bubbling,about 25 mins.
