Chocolate-eclair Icebox Dessert Recipe
Super eclair dessert but a twist on the actual eclair People will be asking for this recipe

Ingredients
  • 22 (1/2 sheets) of Honey Graham crackers, divided (14 oz box)
  • Cooking Spray
  • 3 cups milk
  • 2 (3.4 oz) pkgs of vanilla instant pudding mix - DO NOT USE SUGAR FREE
  • 1 (8 oz) softened cream cheese
  • 1 (8 oz) Cool Whip
  • Glaze:
  • 1/4 cup milk
  • 2 tbsp softened butter
  • 2 tbsp honey
  • 2 ozs unsweetened chocolate (melted & cooled)
  • 1-1/2 cup Powdered sugar
  • Optional: Flavored liquor (1/4-1/2 cup)

Directions
  1. Arrange 7-1/2 graham crackers sheets in bottom of a 9 x 13 baking pan sprayed with cooking spray
  2. Combine 3 cups milk with pudding mix and cream cheese in a bowl
  3. Beat at low speed for 1 minute or until thick
  4. Fold in Cool Whip and optional liquor (such as, Kahlua, Cappacino, Irish Cream, Amaretto, etc.)
  5. Spread half of pudding mixture over graham crackers.
  6. Top with 7-1/2 more graham crackers,
  7. Repeat with remaining pudding mixture
  8. Top with 7-1/2 more graham crackers
  9. Glaze:
  10. Combine milk thru chocolate ingredients and beat well with mixer
  11. Gradually add 1-1/2 cup powdered sugar to milk mixture
  12. Beat well
  13. Spread chocolate glaze over graham cracker
  14. Place wooden toothpicks in each each corner and middle so cover does not touch chocolate glaze
  15. Cover very loosely with plastic wrap
  16. Chill at least 12 hours

I make something like this just with a different glaze. However, thhis glaze sounds phenomonal. I can't wait to try it. thanks


Oh yeah - this one is going on the Must Try list!


I just wanted to let you know that I finally made it this weekend. I really like it but I found that the crackers got too soggy and didnt look so presentable. I would make it again but I donnt think I would serve it to guests again. Thanks (the recipe that I make similar to this is without the creamcheese or the whip cream so I thik thats why the crackers dont get as soggy)


Thanks, my sister-in-law makes something like this and can never seem to give me the recipe. I'm sure my kids will be forever greatful to you!
