Ingredients

How to make it

  • Thaw frozen spinach and press out any excess liquid, do not cook spinach
  • Place in a large bowl and add herbs, garlic if using, the cheeses, eggs,olive oil and salt and pepper and combine very well
  • Butter a 9 x 13 pan. Place 6 sheets of phyllo ( butter each sheet ) on bottom of pan.
  • Add 1/2 of the spinach mixture
  • Place on another 6 six sheets ( again brush each sheet with the melted butter ) .
  • Add remaining spinach mixture
  • Place on 4 phylllo sheets ( again butter each well ) and esp butter top sheet very well
  • Using a sharp serrated knife score out triangles but cutting pie in half then each large triangle in half and again each smalloer traingle to make 16 pieces.
  • Bake in a 350F oven until golden about 45 to 60 minutes.
  • serve warm from the pan.
  • may be cooloed, frozen for future use

    Had to get this one made and in the freezer! What a delicious aroma and I am a filo fanatic too. I made 2 extra little ramakins for supper tonite. Thanks for this one.I don't know why the stars come out like that...must be doing something wrong.

    The niece of one of my late friends (Macedonian, who LOVED my Coney Red Sauce, as well) gave me a recipe for Banitsa, which I think is quite similar to Spinach Pie, but she took the long route to the finished product by making her own Filo Dough. She also alerted me to the fact that Ya-Ya's is now selling Spanokopita in their restaurants. I did buy it there a couple of times, and it wasn't bad. However, I think I'm going to like this better. Thanks for posting this, Midgelet!! ;-)
