How to make it

  • Coat the boiled eggs in a little flour seasoned with salt and pepper.
  • Mix mace, salt and pepper with sausage, then divide sausage into 5 equal portions.
  • Pat out into rounds, then wrap each round around an egg, making sure they're all covered with no gaps.
  • Mix the water with the beaten egg, dip each wrapped egg in it, then roll in the breadcrumbs.
  • Deep fry in hot (360-375d) 5 or 6 minutes, or fry in a skillet in deep oil, turning frequently to make sure they're evenly cooked, until golden brown.
  • Drain, cut in half if you'd like.
  • Serve hot or cold.

    I LOVE scotch eggs! This is much like my recipe too. I did learn that you can oven bake them if you pour a little melted butter on them before you bake them. Then turn them over once while baking. I can't remember where I heard about that but it's almost just as good as the real thing.
