How to make it

  • Place 2 tbsp butter in a small saucepan or microwave safe bowl with the garlic. Melt butter and set aside.
  • In skillet, melt another 1 tbsp of butter with 1 tbsp olive oil. Add chopped shallot and cook for 2 or 3 minutes. Add asparagus and cook until asparagus is tender, but still bright green. Remove asparagus with slotted spoon and set aside. Add remaining 2 tbsp butter to skillet. When melted, whisk in flour to create a roux. Whisk in milk slowly, and bring to a boil, stirring often. Add mustard, dill, flaked salmon and asparagus, and heat through.
  • Meanwhile, brush bread with butter-garlic mixture and toast in toaster oven, under broiler or on a grill pan/griddle until golden.
  • Place a slice of bread on each plate, top with some of the asparagus and spoon creamed salmon mixture over top. Garnish with chopped parsley or dill.

    I used fresh salmon, fresh dill and cream(so less thickener) and it was rich, easy an delicious. We eat a LOT of salmon and asparagus, both, so this is a given, now for the left overs! Oh, I did add a lil fresh lemon juice cus, well, it's creamy, fish and dill. I used regular Dijon but I added a few dashes of hot sauce. Thank you, Christine! More, here....Christinems Creamed Salmon
