Bacon Fried Rice

- 4 cups cooked white rice(can sub brown for a different texture, flavor), cooled(leftover is fine!) shopping list
- about 1t rice vinegar shopping list
- 1/2lb bacon, chopped shopping list
- 1/4-1t red pepper flakes and or a healthy dash of hot chili sauce shopping list
- dash(and I mean a DASH) of sesame oil(optional) shopping list
- 2 eggs, slightly beaten shopping list
- 3-4 green onions shopping list
- couple t soy sauce or teriyaki sauce(I greatly dislike teriyaki, and can barely stand soy alone, so I use a sauce called Dale's. It's about all I can handle :) shopping list
- fresh ground pepper blend, or black pepper shopping list
How to make it
- Add vinegar to rice and toss well See Photo. Set aside.
- In medium skillet or wok(I like the texture and flavor that cast iron brings, so I use it) brown bacon pieces until done.
- Set bacon aside but leave grease.
- Add red pepper flakes and rice to pan and cook over medium heat, stirring frequently, so make sure every grain gets covered with the fat. See Photo
- Add beaten eggs and immediately stir quickly to not get big lumps of scrambled egg. :) You are just looking for the lil bits to run throughout the rice.
- Continue to stir and toss well and add bacon, soy sauce, sesame oil, green onions and pepper.
- Cook until just warmed through.
- *PLEASE NOTE* This rice doesn't taste like bacon, exactly, but the bacon, does...errr...obviously. ;) The point is, if you just want a flavorful fried rice but not to have bits of bacon, simply fry half a pound of bacon, remove it and save it or use it for breakfast the next morning, and continue with the recipe, not adding the bacon back in. You'll still get a wonderful, different variation of a classic dish. :)
