- 5lbs potatoes(I used russets, you could use Yukon Gold, if desired), peeled and diced shopping list
- 8oz cream cheese, softened shopping list
- 2 eggs, beaten shopping list
- fresh ground black pepper shopping list
Mix Ins
- 1/4lb bacon pieces, cooked crisp shopping list
- 1/2 cup cheddar or colby cheese, shredded shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- 1/4lb thick cut ham, diced small shopping list
- 1/2 cup swiss or jack cheese, shredded shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- 1/2 cup thick chili(or just drained seasoned chili beans, roughly mashed) shopping list
- 1/2 cup pepperjack cheese, shredded shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- 1/4-1/2 cup diced hot peppers(can sub mild chili peppers. If using canned, drain well) shopping list
- ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ shopping list
- 100% potato flakes(for thickening, if needed) shopping list
For Coatings
- 1/4 cup dried chives shopping list
- ~~~~~~~~~~~~~~~~ shopping list
- 1/4 cup dried spinach flakes(could sub dill) shopping list
- ~~~~~~~~~~~~~~~ shopping list
- 2 rounded T smoked paprika or 2T chili powder with small amount of brown sugar or honey powder(use a good quality spice) shopping list

- 1/4 Cotija cheese, grated shopping list
How to make it
- Bring potatoes to boil in large pot of water.
- Cook until very tender, about 15 minutes, and drain well.
- Let cool slightly.
- In bowl of stand mixer, combine potatoes and cream cheese and beat well, until smooth.
- Add eggs(make sure potatoes aren't still steaming! You don't want to cook the eggs) and a fair bit of fresh ground black pepper and mix well. See Photo
- Refrigerate for at least 2 hours, covered.
- Separate potato mixture into 4 medium sized bowls and add a set of "mix ins" to each bowl and combine well.
- **add potato flakes, if needed, to thicken mixtures enough to roll into balls.
- Roll mixtures into about T sized balls. Roll each ball into a coordinating coating: I used chives for the bacon cheese, spinach for the ham and cheese, smoked paprika for the chili/cheese and cotija for the hot pepper. See Photo
- Place on lightly greased baking sheet and bake at 400 or about 10-12 minutes until warmed through and firm enough to pick up. :)
- Serve or present in candy boxes/papers, if desired :)
