Bruschetta Chicken

- 1/2 cup all-purpose flour shopping list
- 2 eggs, lightly beaten shopping list
- 4 Boneless,skinless chicken breast halves shopping list
- 1/4 -1/2 cup grated parmesan cheese shopping list
- 1/4-1/2 cup Dry Italian bread Crumbs shopping list
- 1 Tablespoons butter, melted shopping list
- 2 Large tomatoes, seeded and chopped shopping list
- 3 Tablespoons fresh basil, minced shopping list
- 2 garlic cloves, minced shopping list
- 1 Tablespoon olive oil shopping list
- salt and pepper to taste shopping list
How to make it
- Place flour and eggs in seperate shallow bowls.
- Dip chicken in flour, then in eggs.
- Place in a greased 13x9x2 inch baking dish.
- Combine the Parmesan Cheese, bread crumbs and butter.
- Sprinkle over chicken.
- Loosely cover baking dish with aluminum foil.
- Bake at 375 degrees for 20 minutes.
- Uncover.
- Bake 5-10 minutes longer, or until top is browned.
- While that is finishing in the oven, in a bowl, combine the tomatoes, basil, garlic, olive oil, salt and pepper.
- Spoon over the chicken.
- Return to oven for 3-5 minutes or until the tomato mixture is heated thoroughly.
- Serve.
