How to make it

  • Spray or lightly grease a glass 9X13 pan.
  • Combine butter, 1/2t salt and crumbs in pan and mix with fork or hands until they are coated and can be pressed to form crust.
  • Firmly press into pan to create an even crust.
  • Cover with coconut
  • Pour condensed milk over coconut layer. Do not saturate it, or it won't cut, later!
  • Cover with toffee bits and nuts
  • sprinkle with 1/2t salt
  • Bake at 350 for 25-30 minutes until lightly browning and topping is melty.
  • Cool completely before cutting. You can refrigerate them for an hour or two, or let them stand at room temp all day.
  • For Honeyed Condensed Milk

  • I wanted to use honey to sweeten these, and I've done the sweetened condensed milk experiment, and it was successful (Make It Yourself Sweetened Condensed Milk) so I figured I'd give a honey version a try. It too, worked!
  • I small can evaporated milk(14oz)
  • 8oz honey
  • dash of vanilla
  • Heat milk over medium heat until simmering(DO NOT BOIL)
  • Add honey and stir and continue to cook, until honey is melted.
  • Continue as above until milk has reduced and thickened, about 15-20 min.
  • Let cool. Milk will thicken upon standing, so only let cool, slightly before using in recipe! :)

    Fantastic! I used the canned condensed milk and was surprised about how thick it was. I just slowly poored it on "drawing" lines back and forth. I figured that when it was in the oven it would melt and cover it. Probably 1/2 a can in id not use the optional nuts. Mine set up perfectly and cut well too. Thanks for the recipe! Every time I make a baked good (we're not huge on sweets here) at least 1/2 gets tossed. Not this time! Loved it. Thanks, Keni! Oh, and for the cookies I used Keebler Vanilla wafers.
