Coconut Toffee Bars

- 2 1/2 cups dry cookie crumbs shopping list
- 1 stick butter shopping list
- 1t kosher or sea salt, divided shopping list
- 7-8oz shredded coconut(I don't usually buy sweetened, but it could be subbed) shopping list
- 1 can sweetened condensed milk, or, the honey version, as follows, like I did! (you will only use about half of, though, sorry...use the rest for coffee or tea! ;) shopping list
- 1 bag Heath toffee pieces(these have the chocolate and toffee, both, not the bits, which is just the toffee :) shopping list
- 1/2 cup finely crushed pecans or walnuts, if desired shopping list
How to make it
- Spray or lightly grease a glass 9X13 pan.
- Combine butter, 1/2t salt and crumbs in pan and mix with fork or hands until they are coated and can be pressed to form crust.
- Firmly press into pan to create an even crust.
- Cover with coconut
- Pour condensed milk over coconut layer. Do not saturate it, or it won't cut, later!
- Cover with toffee bits and nuts
- sprinkle with 1/2t salt
- Bake at 350 for 25-30 minutes until lightly browning and topping is melty.
- Cool completely before cutting. You can refrigerate them for an hour or two, or let them stand at room temp all day.
For Honeyed Condensed Milk
- I wanted to use honey to sweeten these, and I've done the sweetened condensed milk experiment, and it was successful (Make It Yourself Sweetened Condensed Milk) so I figured I'd give a honey version a try. It too, worked!
- I small can evaporated milk(14oz)
- 8oz honey
- dash of vanilla
- Heat milk over medium heat until simmering(DO NOT BOIL)
- Add honey and stir and continue to cook, until honey is melted.
- Continue as above until milk has reduced and thickened, about 15-20 min.
- Let cool. Milk will thicken upon standing, so only let cool, slightly before using in recipe! :)
