Grams Pineapple Icebox Dessert Recipe
I grew up with this. I crave this once in awhile. It is like a creamy mousse with pineapple topped with whip cream. With vanilla wafers. Comfort food all the way!

Ingredients
  • 9 oz. crushed fine (3/4 cup?)crushed vanilla wafers ( I usually use more, it is so yummy)
  • 1/2 cup soft butter
  • 1-1/2 cups sifted confectioner's sugar
  • 2 egg, beaten
  • 1 can large crushed pineapple, drained well
  • 1 c cup pecans, coarsely chopped
  • 1 cup heavy cream, whipped

Directions
  1. Lightly grease an 9x9 pan.
  2. Pack half the crumbs in the bottom of the pan.
  3. In a medium bowl cream the butter and sugar until fluffy. Add egg, beating well. Make mixture very light and fluffy. Spread this over crumbs.
  4. Next mix the whipped cream and fold in pineapple and pecans just until well combined and spread on top of the butter layer.
  5. Sprinkle on rest of crumbs. Cover and refrigerate 24 hours.
  6. DOUBLE THIS MAKE IN A 9 X 13 PAN THIS IS USUALLY THE SIZE I ALWAYS MAKE

This sounds great - I'm just a little confused. I got the first part, butter, sugar, egg, spread over crumbs. Then, I think, you whip the cream, stir the pineapple and pecans into it and spread over the first layer. Top with crumbs. Is that right?
