Ingredients

How to make it

  • In large soup pot, cook onion and pepper in 2T bacon grease until translucent and softening.
  • Add mushrooms and remaining 2T of bacon grease.
  • Saute about 5 minutes, then add stock, chipotles, adobo, paprika and chicken.
  • Let simmer on medium/low for about 30 minutes.
  • Add spinach and cook down about another 5-10 minutes.
  • Add half and half, salt and pepper, and stir to warm through.
  • Serve with crumbled bacon pieces, shredded cheese and fried onions, if desired.

    This is really good and flavorful IF you like hot-n-spicy. I do ~ good for me!! I didn't use the bacon (would be even better WITH) but just simmered the onions & peppers in the broth. Used canned mushrooms, didn't need the additional salt and pepper, otherwise followed the recipe. I love soups and this goes in my "keepers" file. Thanks for posting!

    Oh girl -- it looks like it would be too much of a change for the woman I cook for -- but I will have to give it a try when I get a chance to go home and cook! It looks fantastic!
