Kickin' Creamy Chicken Soup

- 3 cups cooked chicken(you can use left over as long as it's not heavily seasoned or spiced, or, just grill, bake, boil or braise your own!) cut into bite sized pieces shopping list
- 1/2 lb bacon, fried crisp and crumbled, reserve 4T of bacon grease shopping list
- 1 large onion, diced shopping list
- 2 bell peppers, diced shopping list
- 16oz fresh mushrooms, sliced shopping list
- 4 cups chicken stock shopping list
- 1 can chipotles in adobo sauce, peppers diced shopping list
- 2t smoked paprika shopping list
- 6oz fresh baby spinach(roughly chopped, if desired..I didn't :) shopping list
- 1pt half and half shopping list
- kosher or sea salt and fresh ground black pepper shopping list
To Garnish
- *optional shopping list
- fried onions(I used garlic/pepper) shopping list
- shredded white cheese....Monterey Jack swiss or havarti shopping list
How to make it
- In large soup pot, cook onion and pepper in 2T bacon grease until translucent and softening.
- Add mushrooms and remaining 2T of bacon grease.
- Saute about 5 minutes, then add stock, chipotles, adobo, paprika and chicken.
- Let simmer on medium/low for about 30 minutes.
- Add spinach and cook down about another 5-10 minutes.
- Add half and half, salt and pepper, and stir to warm through.
- Serve with crumbled bacon pieces, shredded cheese and fried onions, if desired.
