Apple And Clementine Moist Cake

cake Batter
- 4 eggs shopping list
- 3/4 cups sugar shopping list
- 1 and 1/2 cups flour shopping list
- 1/2 cup melted butter shopping list
- juice of 3 clementines shopping list
- 2 tsp baking powder shopping list
apple mix
- 2 small apples, cut into small cubes shopping list
- juice of half a lemon shopping list
- 2 tsps cinnamon powder shopping list
- 3 tbsp light muscovado sugar shopping list
clementine syrup
- 1 cup clementine juice (about 10 clementines) shopping list
- 3 tbsp light muscovado sugar shopping list
How to make it
Apple Mix
- Put the apples into a bowl and add cinnamon, lemon juice and sugar. Set aside.
Cake
- Beat the eggs and the sugar for 5 minutes.
- Add the flour and baking powder. Beat again for another 2 minutes.
- Add melted butter, juice and beat again.
- Put the batter onto a baking pan and sprinkle the apples on top. See Photo
- Bake for about 45 minutes. When the cake gets a golden crust and a tooth pick comes out clean it is time to take the cake off the oven. Let it rest for a few minutes and then transfer it to a plate.
Clementine Syrup
- Put the clementine juice and sugar on a pan and bring to a boil. As soon as it starts boiling it is ready.
- Fork the cake and pour the clementine juice all over.
- This is a great cake on its own or with a scoop of ice-cream.
