Skillet Chicken Nachos

- 1 Tb olive or vegetable oil shopping list
- 1-1/4 lbs boneless,skinless chicken breasts,cut in 1/4" pieces(I used leftover) shopping list
- 1 pkg (1 oz) taco seasoning mix shopping list
- 1 can (8 oz) tomato sauce(I used Rotel tomatoes) shopping list
- 1 med. red bell pepper,chopped shopping list
- 1 can (15 oz) black beans,drained and rinsed shopping list
- 1 can whole kernal corn,drained( I did not use) shopping list
- 2 c shredded Nexican cheese blend shopping list
- 6 oz tortilla chips(about 42 chips) shopping list
- !/4 c chopped cilantro shopping list
- I added some pickled, sliced jalapeno peppers shopping list
How to make it
- In 12" non-stick skillet,heat oil over med-high heat. Cook chicken in oil 3 to 5 mins,stirring occasionally,until no longer pink.
- Stir in taco seasoning,tomato sauce,bell pepper,beans,corn and 1 c cheese. Reduce heat to med;cook 3 to 5 mons,stirring occasionally,until heated through and cheese is melted.
- Divide tortilla chips between plates. Spoon chicken mixture evenly over chips. Sprinkle with remaining 1 c cheese,and the cilantro. I added the jalapenos at the end.
