How to make it

  • In 12" non-stick skillet,heat oil over med-high heat. Cook chicken in oil 3 to 5 mins,stirring occasionally,until no longer pink.
  • Stir in taco seasoning,tomato sauce,bell pepper,beans,corn and 1 c cheese. Reduce heat to med;cook 3 to 5 mons,stirring occasionally,until heated through and cheese is melted.
  • Divide tortilla chips between plates. Spoon chicken mixture evenly over chips. Sprinkle with remaining 1 c cheese,and the cilantro. I added the jalapenos at the end.
