Tortellini Soup

- 1 tbsp olive oil shopping list
- 2 cloves garlic, minced shopping list
- 1/2 small onion, minced shopping list
- 1 tsp oregano (dried) shopping list
- 1 quart chicken stock shopping list
- 1 15 oz can diced tomatoes shopping list
- salt & black pepper, freshly ground shopping list
- 1 9 oz package tortellini (I used 3 cheese fresh but can use frozen, any variety) shopping list
- 3 cups baby spinach shopping list
- 6-8 basil leaves, roughly chopped or torn shopping list
- parmesan cheese, grated shopping list
How to make it
- Heat the oil in a large pot over medium heat. Add onion and cook until softened & begins to brown a bit. Add garlic, stir and cook for another minute. Add the oregano, tomatoes with liquid, stock, and salt & pepper to taste. Bring to a boil and add the tortellini. Cook according to package instructions. About a minute before they are done, remove pot from heat and stir in spinach and basil. Serve topped with Parmesan.
