Chicken Florentine Sandwich

- 6 boneless/skinless chicken breasts or thighs(about 2 1/2lbs worth, but 1 piece per sandwich, so pick, or pound ones that fit the buns you've chosen! :) shopping list
- 2 lemons shopping list
- olive oil shopping list
- 8oz cream cheese, softened shopping list
- 1/4 cup mayonnaise shopping list
- 6oz mushrooms, diced shopping list
- 1/4 cup diced onions shopping list
- 2 cloves garlic shopping list
- 1T Dijon shopping list
- about 2 cups loosely packed fresh baby spinach shopping list
- 8oz provolone cheese slices shopping list
- 6 hard rolls, like ciabatta shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Drizzle both sides of all pieces of chicken with olive oil, lemon juice(reserve about 1/2 a lemon), salt and pepper and set aside.
- Meanwhile, in small skillet, saute onions and garlic over low heat just until onions begin to soften.
- Add mushrooms and cook until cooked down and soft.
- Remove from skillet and let drain in colander.
- In medium bowl, mix cream cheese, mayo, Dijon, black pepper and juice from 1/2 lemon.
- Add drained onion/mushroom mixture and stir to combine.
- Let rest in fridge.
- Grill, bake, or broil chicken pieces until done through.
- Place a slice of cheese on bottom bun, top with chicken.
- Spread a nice layer of the mayo/mushroom mixture over top bun, and add spinach leaves.
- *bacon and tomato would also be great on this sandwich!

Cream cheese, like bacon, is good on everything.
