Ingredients

How to make it

  • Drizzle both sides of all pieces of chicken with olive oil, lemon juice(reserve about 1/2 a lemon), salt and pepper and set aside.
  • Meanwhile, in small skillet, saute onions and garlic over low heat just until onions begin to soften.
  • Add mushrooms and cook until cooked down and soft.
  • Remove from skillet and let drain in colander.
  • In medium bowl, mix cream cheese, mayo, Dijon, black pepper and juice from 1/2 lemon.
  • Add drained onion/mushroom mixture and stir to combine.
  • Let rest in fridge.
  • Grill, bake, or broil chicken pieces until done through.
  • Place a slice of cheese on bottom bun, top with chicken.
  • Spread a nice layer of the mayo/mushroom mixture over top bun, and add spinach leaves.
  • *bacon and tomato would also be great on this sandwich!

    As soon as I saw you post this recipe I KNEW i HAD to make it! This so far is the best chicken sandwich I have made!! Dead serious!! So good! My family doesn't like mushrooms so I cooked some separately for mine. I added some tomatoes, as you said would be good. This was an amazingly good sandwich!!!! Thanks KENI!!!!
