Easy Excellent Rice Curry

- 1 cup rice of your choice (Not 60 second rice!) shopping list
- 2 cups hot water shopping list
- 1/2 cup diced onions shopping list
- 1/4 cup or more of red and green chopped peppers shopping list
- 2 tbs melted butter shopping list
- 1 tsp curry powder ( I used mild but whatever you like) shopping list
- 1/2 tsp cumin powder (Optional) shopping list
- 1 can diced tomatoes shopping list
- salt and pepper to taste shopping list
- 4 chicken legs seared (Optional) shopping list
How to make it
- Place rice in a large oven proof pot that has a top. I used a dutch oven pot. Add hot water and let stand for 30 minutes to 45 minutes. Then pour off excess water.
- Preheat oven to 350F
- Add all the other ingredients and mix well.
- If planning to use chicken legs sear on both sides. Place on top of rice mixture or leave them out.
- Place top on pot and put into oven for 1 and a half hours until liquid is absorbed. The left overs are wonderful!
