How to make it

  • Place rice in a large oven proof pot that has a top. I used a dutch oven pot. Add hot water and let stand for 30 minutes to 45 minutes. Then pour off excess water.
  • Preheat oven to 350F
  • Add all the other ingredients and mix well.
  • If planning to use chicken legs sear on both sides. Place on top of rice mixture or leave them out.
  • Place top on pot and put into oven for 1 and a half hours until liquid is absorbed. The left overs are wonderful!

    Easy and Excellent is for me! :) I'd like to make just the rice alone and simmering it on the stovetop instead of baking in the oven...
