Affordable Truffled Potato Wedges

- 2 lbs potatoes, cut into wedges(I don't bother peeling) shopping list
- about 2T olive oil shopping list
- 2t malt or red wine vinegar shopping list
- 1t semi coarsley ground pepper shopping list
- 2t truffle salt shopping list
- about 1/4 cup fresh grated parmesan cheese shopping list
How to make it
- Toss potato wedges with olive oil.
- Sprinkle with salt and pepper and toss once more.
- Bake at 425 for about 15 minutes.
- Flip all the wedges over, sprinkle with Parmesan cheese and bake another 10-20 minutes, until fork tender and golden brown
- Drizzle with vinegar just before serving.
- ***Truffles are very distinct with their heady, earthy flavor... and a hefty price tag to reflect their uniqueness. Truffle oil is more affordable, but, it's oil... it will go rancid unless you use it in a timely fashion. And, let's face it as tasty as it is, it's not something you want to use on everything. My solution? Truffle infused sea salt. You even go near the bag, and you know you have truffles near by, but it's affordable, and shelf stable for so much longer. I get mine from a site called thespicelab.com.

Yum! And I agree with you on the truffle salt! I'm so glad you mentioned thespicelab.com - I have been very happy with their products (love that Truffle-Infused sea salt!) Will make these for sure!

Had these for dinner tonight - Dee-licious!! I left the skin on the potatoes, too, and I think that adds to the earthy truffle flavor. These were so good! I used red wine vinegar and while I liked it I think I will go for the malt vinegar next time....more
