Ingredients

  • 2lbs ground meat(venison, beef, pork, lamb, chicken, turkey or any combo) shopping list
  • 4 cloves garlic, minced shopping list
  • 1/4-1t red pepper flakes shopping list
  • 1 can coconut milk(well shaken!) shopping list
  • 1 can(about 7oz) Mexican tomato sauce(should find this in the Mexican section of the supermarket, it's a spicy tomato sauce) shopping list
  • juice from 2 limes shopping list
  • 2T Oyster sauce shopping list
  • 1/4 cup Thai Sweet Chili sauce shopping list
  • 1t dry mustard shopping list
  • 1T dry Thai seasoning blend(I get mine from myspicesage.com, and I HIGHLY recommend it, it's a blend of Ginger, Basil, Red Pepper, Cumin, Cardamom, Black Pepper, Garlic, Sugar, Onion, Red Bell Peppers, Cilantro, Turmeric Extract and Garlic Oil) OR sub about 1/2T of the concentrated mixture found in the tubes in the produce section, plus some of the remaining herbs that aren't included, OR, make your own blend using as many of the above, as possible :) shopping list
  • kosher or sea salt and fresh ground pepper shopping list
  • Large red lettuce leaves(you could also serve this in pitas or other flatbread, or even tortillas, if desired) shopping list
  • green onions, chopped shopping list
  • fresh cilantro shopping list
  • crunchy rice noodles shopping list

How to make it

  • Cook meat with garlic and red pepper flakes in large skillet until meat is just done. Don't over cook.
  • Add coconut milk, tomato sauce, Oyster sauce, chili sauce, dry mustard, lime juice and salt and pepper.
  • Bring to a medium simmer and cook, stirring often, for about 20-30 minutes, or until liquid is nearly all gone.
  • To Serve

  • Add a large spoonful to each lettuce leaf. Top with green onion, cilantro and rice noodles.
  • Fold to eat. :)

    Aside from the fact that you're going to get watery Peepee out of a can, about which you have little choice, this looks delicious. I'll let you know how it taste with fresh, very rich, coconut cream. RJ
