Fresh Blackberry White Chocolate Scones

- 2 cups flour shopping list
- 1T baking powder shopping list
- 1/3 cup raw sugar(or sub light brown sugar) shopping list
- 1/2t fine kosher or sea salt shopping list
- 6T cold butter shopping list
- 1 large egg shopping list
- 1t vanilla shopping list
- about 3/4 cup buttermilk shopping list
- 1 cup fresh blackberries shopping list
- 1/2 cup white chocolate chips shopping list
How to make it
- Whisk together the flour, baking powder, sugar and salt in a large bowl. Cut in the cold, shaved(or grated) butter using two knives or forks, pastry blender or fingers, until mixture resembles coarse crumbs.
- Carefully stir in the chocolate chips and raspberries. Some will break and that's okay. :) Set aside.
- In another bowl, whisk the eggs, buttermilk and vanilla until fully combined.
- Make a well in the center of the dry mix and pour the egg mixture in. A rubber spatula works great.
- Turn out the dough onto your greased/lightly floured baking surface.(either parchment on a sheet or a baking stone works great).
- Using well-floured hands, pat the dough into an 8 inch circle, about 3/4 inch thick.
- Cut into 8 wedges and carefully separate from each other just a bit.
- Brush with a lil melted butter, if desired.
- Bake at 400 for about 12-25 minutes until golden brown and done through.
- Drizzle with a lil white chocolate upon serving, if desired.

This is such a great one Keni! I used brown sugar and a little extra of it too...and we ate these straight up, no chocolate drizzle, and we loved them! Added this to the IMI group ---------> more
