Creamy Greek Chicken

- 3lbs boneless, skinless chicken pieces(I used breasts) shopping list
- 8oz cream cheese shopping list
- 1/2 cup roasted red pepper or Sun Dried tomato vinaigrette(bottled or homemade) shopping list
- 1/2 cup Greek olives, minced shopping list
- 4 cloves garlic, minced shopping list
- 1 onion, chopped shopping list
- 3-4 cherry or other mild pepper, chopped shopping list
- 1 large lemon, juiced and zest from half shopping list
- 1t lemon pepper seasoning(I make my own, but jarred is fine) shopping list
- 1t dried mint shopping list
- 2t dried oregano shopping list
- 1t dried basil shopping list
- (you can sub fresh for all the herbs, but you'll need to about triple the amounts) shopping list
- kosher or sea salt and fresh ground pepper shopping list
- for serving: pitas(I used whole wheat), leaf lettuce, sliced tomatoes and tzatziki sauce(my favorite recipe is in the description, and listed below) shopping list
How to make it
- Combine all ingredients in slow cooker and cook for about 4-6 hours on low.
- Anytime after 4 hours, you should be able to shred the chicken and mix well. This is best if you can check it at about the 4 hour point to shred and stir well then continue to cook and blend the flavors.
- You can remove the lid at the last hour of cooking, as you prepare everything else, if needed and desired, to thicken mixture.(some chicken releases a LOT more liquid than others.)
- Serve in the pitas with tomato, lettuce and Easy Greek Tzatziki
- *If you choose not to use a tzatziki sauce, serve with cucumber slices, green onions, feta and Greek yogurt, separately. :)
