Cheesy Tomato Tots

I needed to use up some tater tots but didn't want them just plain and boring. I just threw in some things I had in the fridge and it worked great! I served these along some hot dogs but could definitely be vegetarian main dish too!
Ingredients
- Tator tots (enough for 4) shopping list
- 1 large tomato, chopped shopping list
- 1 bell pepper, chopped shopping list
- 1 small onion, chopped shopping list
- 2 jalapenos, sliced shopping list
- 1 1/2 cups shredded cheddar (more or less for your liking, and you could use any cheese for this, pepper jack would be good :) shopping list
- 1 chopped green onion, sliced shopping list
How to make it
- Cook the tots on a baking sheet according to package, usually around 18 to 20 mins.
- While the taters are cooking saute up the bell pepper, onion, and if you like (I didn't) the jalapeno.
- Pull out the tater tots when done and either leave them on the baking pan, pour in a baking dish, or (as I did) into 4 single serving baking dishes. If you choose to leave on the baking sheet, make sure you scoot them all close together.
- Top with the onion bell pepper mix, jalapenos and tomatoes. Top with as much cheese as you desire and broil for a couple of minutes just to get the cheese all bubbly :) Pull out top with green onions and dig in!
