Ingredients

How to make it

  • Preheat the oven to 350
  • In a bowl mix the tomatoes, herbs, butter and some salt and pepper to taste. See Photo
  • Divide into 2 ramekins, then break an egg over top of each See Photo. Add a dash more of S&P over the egg, drizzle with half and half See Photo. Top with cheese See Photo. Bake 12-15 minutes, when the whites have set

    These were great and I loved that there was very little mess to clean up. I had some leftover seasoned roasted potatoes so I diced a little up and added that to the tomato mixture and since they were seasoned I backed off the fresh herbs using about half. Ideal portion for an easy, wholesome breakfast. Thanks Mommyluvs2cook, love the step-by-step photos too!!

    I have a version of "shirred" eggs on my "to do list", too! These sound great... you are getting cleverer and cleverer with your tomatoes! ;)
