Ramiken Baked Eggs

- 1 roma tomato, chopped shopping list
- 1/4 cup fresh herbs, chopped, I used basil, parsley and oregano, but use whatever you have on hand ;) shopping list
- 1 tsp. softened butter shopping list
- salt and pepper shopping list
- 2 eggs shopping list
- 2 tsp. half and half shopping list
- 2 tsp. parmesan, shopping list
- 1 Tbs green onion, sliced shopping list
How to make it
- Preheat the oven to 350
- In a bowl mix the tomatoes, herbs, butter and some salt and pepper to taste. See Photo
- Divide into 2 ramekins, then break an egg over top of each See Photo. Add a dash more of S&P over the egg, drizzle with half and half See Photo. Top with cheese See Photo. Bake 12-15 minutes, when the whites have set

These were great and I loved that there was very little mess to clean up. I had some leftover seasoned roasted potatoes so I diced a little up and added that to the tomato mixture and since they were seasoned I backed off the fresh herbs using about ...more
