How to make it

  • Mince chipotle peppers and mix all the adobo, and as many of the chopped peppers as you like(I used the whole lil can:) with the meat, cheese, onion, Worcestershire sauce, paprika and salt and pepper. Mix well as you would a meat loaf, but be gentle.
  • Form into 1/4 or 1/3lb patties.
  • Grill or broil for a few minutes, each side, until cooked through to your preference.
  • Salsa Mayo

  • Combine ingredients and refrigerate until ready to use.
  • Serve burgers on buns with desired ingredients.

    Well as usual, dear Keni, I had to figure out how to cut your recipe for 600 people down to a recipe for one. :) I had 1/2 pound of ground beef to use up so I used two tsp of the chipotles, 3 Tbs of cheese, 2 Tbs of minced green onion, 1 tsp of Worchestershire and a generous sprinkle of smoked paprika, plus the salt and pepper. I grilled these on my charcoal grill - three minutes one side, five on two, then three for the last. Just enough heat for me. I served these up pretty plain. Really super good!     I just made these burgers and HOLY @#$! are they tasty... I love chipotle peppers but never mixed them in a burger - DELICIOUS!
