How to make it

  • Cook gnocchi according to instructions & drain.
  • Meanwhile, melt butter in a large skillet over medium heat. Cook until butter is beginning to brown, about 2 minutes. Add shallots and cook, stirring, until softened - about 2-3 minutes. Add tomatoes and cook for about 2 minutes, stir and add zucchini & seasonings stir. Cook another 2 minutes until tomatoes just start to break down. Stir in Parmesan & parsley. Add gnocchi and toss to coat.

    This is right up my street. Alas, like RJ, I can't get frozen gnocchi here - or fresh! - but I'll soon be in London for a while and this will be on the menu. Great post. Thanks.

    Nice sauce combo; fresh & tasty. Can't get frozen gnocchi in Samoa but not to worry. I had some on my last visit to the US and was disappointed; guess I'm old school. If you have a bit of time try Jimmys Gnocchi and see if you don't notice a difference. RJ

    Sounds fresh and easy Detroit...I would say it's a good use of all that zucchini that I have...wish I had that problem with having excessive tomatoes...
