Black Eyed Pea Salad

A perfect salad for a maindish on those hot days when you don't want to heat up the kitchen.
Ingredients
- 2 cans (15oz) black eyed peas, drained and rinsed shopping list
- 2 TB onion, finely chopped shopping list
- ¼ c. green pepper, chopped shopping list
- 1 can (15oz) corn, drained and rinsed shopping list
- 1 can (15oz) diced tomatoes, drained shopping list
- 1 TB minced garlic shopping list
- ¼ - ½ tsp. crushed red pepper (optional) shopping list
- ½ c. Italian dressing shopping list
- lemon pepper shopping list
- lettuce, torn into small pieces shopping list
- 1 cucumber, sliced shopping list
How to make it
- In a medium bowl, combine black eyed peas, onions, green pepper, corn, tomatoes, garlic and if using, crushed red pepper. Toss lightly. Add Italian dressing, lightly mix in. Sprinkle the top with lemon pepper, cover and chill.
- When ready to serve, place 1 ½ c. of black eyed pea salad on top of each plate of torn lettuce. Add sliced cucumbers to the side.

A definition of caviar is "something considered too delicate or lofty for mass appreciation. This is definitely Southern Caviar. Good post!
